Swordfish

The swordfish is a sleek and streamlined fish adapted to roaming the world's oceans. The swordfish has a powerful, stiff tail fin as well as a large keel-like back fin that often is above the water as the fish swims. The most noteworthy feature of the fish, however, is its "sword" on the end of its upper jaw/nose. Swordfish over 500 lbs. have been caught, but most commercially caught swordfish are in the 50-200 pound range. Swordfish are found in most of the world ocean's temperate waters.

Freshness

After the local fishermen catch our fish (with long liner fishing vessels) it is delivered to our processing plant the same day where it is put in a special container with chilled water to lower the temperature of the fish. When the temperature is right the fish is processed under very strict rules and with the newest state of the art techniques. Within 2 days after catch it is shipped with very reliable freight forwarders and arrives in Holland or other European countries within 15 hours. Tonnara makes sure our fish shelf life is maximum twelve days after it leaves our processing plants.
